Newly opened restaurant, Bouillabaisse, serves sustainable coastline cuisine in Mayfair, London. It is the latest restaurant founded by Kurt Zdesar, who launched Chotto Matte in Soho in 2014 and brought Nobu to London. Zdesar’s first-hand experience visiting fishing communities around the globe was the inspiration for the restaurant. Kurt Zdesar said, “Bouillabaisse is a celebration of my lifetime of travel and showcases my love-affair with seafood.” The menu has been created by Executive Chef Jordan Sclare and together Sclare and Zdesar have ensured seafood is central to each dish. Dishes include Athenian-inspired crisp Seppia Nero with Oregano and Orange, Snow Crab Cakes with Garlic and Herb Salsa and many more. The wine list features selections from worldwide coastal vineyards, ensuring to enhance the flavours of the seafood. A list of cocktails will run alongside the wine menu, with twists on classics such as the chilli-fuelled Mai Tai Caliente and a Coffee Negroni. The 65-cover restaurant at 4 Mill Street is open for breakfast, lunch and dinner. Breakfast is served from 8am and includes dishes such as Snow Crab Scrambled Eggs on Sour Dough Toast. The restaurant was designed by Jordan Littler and is split across 2 floors and includes a classic bar, a large chef’s table for up to 20 guests and tanks filled with fresh live seafood. Zdesar plans to open more restaurants this year, with sites confirmed on Mortimer Street, Chiltern Street and Wimpole Street.
