Crystalbrook Collection, Australia’s largest independent five-star sustainability-led hospitality company, unveils its latest addition to the vibrant Cairns hospitality scene. Opening its doors on 19 October 2023 at the iconic Crystalbrook Riley resort, Calypso Club is poised to be the hottest new dining destination in Tropical North Queensland.
The new speciality rum and seafood bar evokes the spirit of bygone holidays devoted to lazing by the beach and afternoons spent sipping piña coladas in the embrace of warm breezes. The new non-members’ club concept – an elevated experience without exclusivity or pretension – is destined to be a popular gathering place to unwind, savour seafood and crafted cocktails, enjoy live entertainment, and feel part of the Calypso community.
Crystalbrook Riley General Manager, Melissa Shaw, said the venue continues Crystalbrook Collection’s delivery of design-focused, market-leading restaurants and bars across Australia, and expands on Crystalbrook Riley’s rooftop bar, Rocco, and Asian fusion restaurant, Paper Crane. Tom Bulmer, cocktail expert from The Social Spirits, has collaborated with Calypso Club to develop a comprehensive cocktail program.
“Calypso Club has a tropical, wanderlust spirit that perfectly balances playful and bright with elegant and charming. Its unique cocktail program pays homage to the region’s sugar cane history, with a focus on local and international rums and fresh seasonal tropical fruit,” said Shaw.
Added Bulmer, “At Calypso Club, we’ve reimagined classic holiday tipples in a contemporary ‘Calypso’ way. The cocktail program will be a colourful mix of fun and playful flavours that will also appeal to a more sophisticated palate. It’s all about creating a memorable and vibrant experience with every sip.”
The dishes at Calypso Club draw inspiration from beloved Australian fish and chip shops and American crab shacks, infusing fresh, seasonal seafood into modern takes on fish burgers, grilled scallops, and bug rolls.
Designed by renowned interior architecture and design studio Mitchell & Eades, the venue boasts an open and inviting space at the base of Crystalbrook Riley’s iconic tower, taking advantage of its aspect overlooking the picturesque esplanade. With bespoke lounges, warm colour palettes, and a striking terrazzo stone bar, Calypso Club is set to become Cairns’ latest go-to F&B destination.
