Sydney’s luxe Hilton Hotel says it has ‘upped the ante ‘ in the events arena, and to prove it the hotel last night showcased its culinary skills by staging a spectacular gala banquet for more than 250 influencers and event planners. Japanese drummers escorted the large group into the hotel’s glittering event space, banging their drums all the way into the large ballroom where seven food stations served everything from caviar, Peking duck, Spanish Tapas and a table groaning with sumptuous Mediterranean seafood. As the glitzy party got underway, a Japanese tuna chef turned up with a huge 50 kilo tuna and proceeded to carve it up on stage, much to the amazement and delight of the partygoers.

Guests were also treated to the finest French, Spanish and Italian cheeses paired with wines from around the world. It was all put together by Hamish Neale, Hilton Sydney’s new Executive Chef who started at the hotel just three months ago after working at some of the best hotels in the world in China and the Asia Pacific for the past 15 years. He told LATTE that his passion is to bring great quality food into the event space.
“We want to remind people that we are here for social events, weddings, product launches, cocktail, and parties that we can stage in what I believe is the best event space in the city”.
“We want people to come to us and don’t just ask for our standard banquet menu, but ask me to do something really spectacular, something a little bit different to what you would usually do and give everyone an individual experience”. He says he is honoured to be surrounded by amazing people that helps put on events like this tonight. Malcolm Zancanaro, Hilton Sydney General Manager says he has a dedicated event team of 30 people that are really event specialists in their own right. “We want to be a one-stop-shop and to ensure that we have at our fingertips all of the best lighting, sound technology to make an event successful.”
“Organising an event is a daunting prospect, but ultimately we do it for a living and we have all the experts who can help with that” “We also have one of the best locations in the city right in the heart of the CBD opposite the iconic Queen Victoria Building, and with our luxurious hotel and its 587 wonderful rooms, what better place to stay during your event”. After a night of feasting on superb cuisine and wines, the guests were left in no doubt that the Hilton Sydney is the one to watch in the booming event market.
