Boutique luxury newcomer The EVE Hotel Sydney has set an opening date, with the Wunderlich Lane hotel to launch on 13 February 2025. The lifestyle hotel draws on art, culture and culinary experiences to reflect the energy of its locale, with the design the brainchild of SJB’s Adam Haddow, 360 Degrees’ Daniel Baffsky, and Interior Architect George Levissianis. “The EVE is about creating spaces that inspire and connect, while paying homage to the rich cultural and natural heritage of Sydney,” Haddow said.
“Every detail—from handcrafted lighting to the Australiana palette—has been designed to reflect this vision.”
Vaulted ceilings, curated interiors and immersive art installations are all part of the vision, with several pieces from from prominent Surry Hills artist and gallery owner, Louise Olsen, also featuring.

Guests will discover a rooftop garden packed with native and exotic plants, a nod to the site’s historical roots as one of Sydney’s first pleasure gardens, and a restaurant with panoramic views over Surry Hills and Redfern. The rooftop space also features a 20-metre rooftop pool, finished with textural natural stone, bespoke cabanas, and imported Sukabumi tiles. Meanwhile, Liquid & Larder’s European-inspired Bar Julius serves up an all-day dining concept that covers everything from from morning espressos to evening cocktails. The EVE has been designed to integrate seamlessly with the Wunderlich Lane precinct’s curated retail and dining offerings. To mark the occasion, the hotel has put together a launch package which includes overnight accommodation, a signature cocktail for two and a bespoke EVE gift to take home, priced from $519 per room for stays from 14 February to 30 June 2025.
