The Gold Coast dining scene is readying for its newest addition, with restaurant and beach club Haven to launch at the new Mondrian Gold Coast on 5 June. Perched above the shoreline of Burleigh Heads the new restaurant will offer “elevated cuisine” with relaxed, all-day coastal living. Led by Executive Chef Aaron Teece, whose pedigree includes EST., Felix, and Manly Pavilion, Haven promises a menu where “provenance meets play.” With a backdrop of ocean views, curated playlists, and live performances, the venue is designed to “shift with the day, from sun-drenched lunches to twilight drinks and lively evenings.” Haven spans the third floor of the Mondrian Gold Coast, Australia’s first Mondrian hotel, and includes a dining room, pool club, private cabanas, and a sunset bar. The cuisine focuses on premium regional ingredients, with seafood from Cairns, the Sunshine Coast, and Northern NSW, while meats and produce are sourced from local hinterlands.

“I want people to feel the season and the source with every bite, because when ingredients are respected, simplicity speaks loudest,” Teece said. “We’re not trying to overwork anything — the quality of the produce does the talking.” A woodfire grill anchors the kitchen, adding depth to dishes across both restaurant and poolside menus. Guests can expect raw bar offerings, share plates, and coastal-inspired cocktails. “It’s all about creating food that feels grounded but still sparks a sense of occasion in this beautiful part of the world,” Teece added. The drinks program features an extensive champagne and wine list, agave spirits including tequila and mezcal, and cocktails crafted for the beachside setting.
