On the ground floor, the hotel’s signature restaurant LiTO brings “the warmth and generosity of Italian summers to the coast,” led by Italian-born Head Chef Andrea Morigi, formerly of Merivale’s Uccello. The all-day venue serves up wood-fired breads, lobster bucatini, rotisserie chicken and tableside tiramisu, offering a Mediterranean-inspired dining experience in an alfresco setting. Upstairs, the third-floor venue Haven delivers “a refined yet approachable” menu with a focus on seasonal produce, according to Executive Chef Aaron Teece. On the menu are seafood, woodfire cooking and regional ingredients, served alongside poolside relaxation with sundown cocktails, a dedicated agave menu and live music from emerging and national artists. The hotel also introduces CIEL Spa with its bio-wellness treatments, restorative therapies and advanced technology. Magnesium-infused plunge pools and a 24-metre resort-style pool can also be found on the third floor. Rates for Mondrian Gold Coast start from $749 per night.
